What You’ll Need

To make your perfect lunch box snack, you will need a few simple ingredients. You’ll need some canned corn, plain flour, milk cream, butter, sugar, and salt. Additionally, you will need a large bowl and a rolling pin. For the filling, you can either choose to use only the canned corn, or mix it with some other ingredients such as cheese, onions, garlic, peppers, or other vegetables. The choice is yours!  Once you have all of your ingredients gathered, you’re ready to start assembling your delicious snack.

Making the Corn Rolls

Making the corn rolls is surprisingly easy and requires only a few simple ingredients. Begin by combining the cornmeal, baking powder, sugar, salt, and butter in a bowl until well blended. Once combined, add the milk and eggs, stirring until the mixture is uniform and there are no lumps. Next, grease a skillet or pan with oil or butter and set it to medium heat. Spoon out a small amount of the batter onto the skillet and cook until both sides are golden brown. When both sides are cooked, remove the roll from the pan and let it cool on a plate.

Repeat this process for all the remaining batter, making sure to grease the skillet in between each roll. Once all the rolls are cooled, use a pastry brush to generously spread the milk cream onto each roll. Serve the rolls warm or at room temperature and enjoy!

Assembling the Rolls

Once you have your ingredients prepared and ready to go, it’s time to start assembling the rolls. Begin by taking one of the wraps and spooning a line of milk cream along the center. Then take one of the roasted corn pieces and place it at the center of the wrap. Roll the wrap up from one side until it meets the other end and press lightly to secure. Place each assembled roll on a plate, making sure not to let them touch one another. Repeat this process until all of the ingredients have been used.

Once you have finished rolling all of the rolls, it’s time to heat them up. Heat a skillet over medium heat, adding a small amount of oil if desired. Place each roll onto the skillet, making sure not to overcrowd them. Cook each roll for 1-2 minutes on each side or until lightly golden brown and crispy. Remove from the skillet and set aside to cool slightly before serving.
